Tastes Great, but Needs a Little More Protein
I'm definitely into having some variety in the vegetarian backpacking meals. The beans and rice tasted good, but could have used a little something. It seemed more like a side dish than a main meal. Also, it had about half of the protein as my friends non-veg meals from the same brand. Adding a little seitan or something would fix that right up. It was super easy to make and hit the spot at the end of a long day, so I don't mean to complain. Sometimes instant rice comes out weird with some grains still hard. Not with this one. Texture was tight.
Delicious and filling!
An employee at REI recommended Backpacker's Pantry Cuban Coconut Beans and Rice along with their Pad Thai, and these choices did not disappoint! My backpacking buddy and I thought we were hungry enough to eat both in the same evening, but I ended up having to store 3/4 of the beans and rice overnight and reheated it for breakfast. It was incredibly filling and kept me nicely energized on our longest hiking day. This was my first time cooking dehydrated meals, and I was pleasantly surprised by the quality, taste, and ease of preparation. The bag is sturdy enough to zip closed and hold from the top to shake it instead of stirring.
Clean Ingredients, great base to start with
I give this meal 5 stars for the clean ingredients. Everything in this meal is real food, thats hard to find in a backpacking meal. There are no weird chemicals or preservatives. I give this meal a 3 star for taste as it was bland and too much dried onion in my opinion. I was able to add a hot sauce packet and a True Lime packet which made it delicious. This would be a good base if you add a few tasty additions.

So I usually just bring PB&J or cheap stuff from the grocery store. I decided to splurge and this sounded good. I really was worried it would not hydrate, but after the recommended 20 minutes, it was still hot and perfectly hydrated. I don't know if I was starving, but almost ate the whole thing by myself! There are some reviews stating it was bland, but I did not think so. I also did not taste any coconut, but not really a deal breaker. I like spicy food, but I don't think I would have added hot sauce to it if I were eating this at home. I will definitely purchase it again.
Product Seems to Have Changed
I first purchased this meal a couple of years ago. The package was larger (800+ calories for two servings). This version had a more balanced flavor that was not overwhelmed by garlic. This more recent version of the product I ate on the trail a couple of days ago. I agree with other reviewers that there was far too much garlic. I'd also add that there was little of the coconut flavor. This used to be one of my favorites and my wife absolutely loved it. Based on my most recent experience I won't be purchasing more.
Good, filling camp meal.
I had this meal after a long day hike. It contains two servings at about 300 calories each (610 total) but I ate the whole thing with nothing added. As a standalone meal it's very filling and only needs a little seasoning. I think ideally I'd eat half of it with some protein or some veggies. Fair warning if you eat both servings. It gives some serious gas so maybe don't share a tent.
best dinner
Just got back from 7 day backpack in the Escalante and this was by far the best dinner of the six I took. The flavors were wonderful together, and I think the small packet of olive oil included really made it taste fresh and almost home made. My husband always eats half of my dinner plus his own and he also thought this was the best of all the dinners we brought.
Glad I tried it
I normally wouldn’t go with a vegetarian meal, and like most Backpacker Pantry meals I feel like it is awesome when you split it with another meal. I’ve had a couple pork meals from other brands that I love with jambalaya or rice and bean meals. This meal was filling, it was a good salt level, not too salty, not too bland. There is a cilantro flavor (not too crazy, but definitely can taste the cilantro). For whatever reason the last bites were way saltier than the rest, and I stir it like crazy! Consistency is good, flavor was good. I’m glad I tried it, it won’t be a go to main meal or one I’d pack to eat for dinner, but would definitely pack when me and someone else can split two dinners for variety.
Excellent taste for a freeze dry meal
I've eaten numerous freeze dried meals and have generally had negative experiences, both with respect to flavor and how they made me feel. However, this one was good. Flavor was enjoyable (5/10 for food generally, 9/10 for a freeze dry meal), and I felt fine after eating it. My only complaint was that it could have been saltier, particularly after a long day of backpacking; however, that's easy to fix with a dash of extra salt. Adding a little bit of oil (e.g., olive oil) would improve the meal as well. The packaging says it serves two people, but for someone with an average appetite after a full day of exercise, it's probably best to plan on this serving just one person. Easy to prepare: just add boiling water and let soak for about 15 minutes. The recommended amount of water was perfect for correctly preparing the meal.
freaking delicious
This was savory and gently sweet all at once. Quite the comfort food after an exhausting hike. Very filling, perfect size for sharing, we might have also eaten meat sticks with this meal. I will eat this meal over and over again, sometimes I crave it, even when I am not camping. In general my flavor preferences are cubano sandwich, grilled salmon, rice pudding, beans + rice, Thai food, berries + cream, and creme brûlée. If you like these things you might also like this Cuban coconut meal.
