I bought this for a trip to Mexico where I used it exclusively on an electric cook top. I made Quesadillas many times, the bits of cheese that oozed out did not stick or burn, I also made smash burgers-awesome, and chicken milanese also awesome. The handle is not flat but sticks up at a 25 degree angle it also rattles a bit when you flip food or shake the pan. It’s not a performance issue more a funkiness issue. The curve between the bottom and sides is absolutely perfect for flipping food. I sautéd mushrooms and made Joe’s Special three times. I never had anything burn or stick. I cannot imagine backpacking with a pan this large with less than 4 people in a food group but it’s very light for its size. There is an 8” size for backpacking. The ceramic coating is fantastic DO NOT BUY a stainless steel frypan unless you need a signal mirror. SS Pans burn food. Hard anodized pans everything sticks. If you cook real food buy a ceramic pan it’s totally worth the money.
