Comments about Backpacker's Pantry Egg Mix - 16 Eggs:
These are the only eggs on the market that have no additives. They are just pure eggs. I have to cook for a lactose intolerant buddy and all other egg mixes contain some amount of milk products. I only have two issues with this product. One is that it takes quite a bit of mixing to get it incorporated with water - not too big a deal. The other issue is that if you mix it in the proportion that the manufacturer recommends you end up with rubber eggs. You need to use only half the egg amount per unit of water that it calls for and you will end up with nice fluffy scrambled eggs. At first it will seem too watery - but they cook up just fine. You do need to use a little bit of a heavy hand with salt (or whatever spice you are using) to flavor these eggs - but that's an opportunity, not a drawback. I don't buy any other dried egg product on the market and have been using this for 10 years in backcountry backpacking with great success.
