Think of this as glorified ramen noodles with freeze dried chicken added for good measure. This was really tasty until we got down to the bottom of the pack. Apparently we did not mix it up well enough, as the bottom of the pack had the bulk of the 'seasoning'. Let's just say we could do without the seasoning, as the rest of the product tasted very good with a little salt and pepper added.
After having just completed a very taxing climb into and out of a deep gorge, and six miles or so of moderate hiking, we were starved. This is definitely one of the larger meals offered by Backpacker Pantry, as we both had enough food to fill us up completely. It felt like an endless supply of food as we divided out plateful after plateful! Only the last ounce or two were unpleasant, as the majority of seasoning had settled to the bottom and made for a rather potent end to the meal. Had we skipped the last two bites (and thereby avoided some of the salty seasoning) this would be five stars all the way!

I disagree with the other reviewers about the Chicken Saigon Noodles. I brought 6 of these on a 5 1/2 day backpacking trip in the Tetons for my fiance and I (and also in the Smokies Mtns). They are slightly heavier/bulkier than other freeze dried choices, but are far tastier than ramen and are packed with fiber, carbs, protein, vitamins, and salts that you're body needs while backpacking. There is about 1100 calories in a package, more than most meals, and you need calories on a longer trip. My fiance and I loved the taste of this meal, looked forward to it at dinner on the trail, each devoured our own despite the mosquitos, and wish we had only brought the Saigon Noodles with us. One of the best of many many freeze dried meals I have tried.

I bought this thinking Saigon Noodles would be something like "Pho". It ended up being about 2-3 packs of Top-Ramen noddles (which would have tasted better then this) with broth seasoning that tasted slightly sweet but very bland.
