I am a 74 year-old advanced intermediate skier.  I am 5'8 and weigh 180 pounds.  I am considering buying either the Pursuit 800 or Pursuit 600.  What length ski should I buy?

Are the bindings already mounted on the ski?

​No, the bindings are not mounted on the ski. The bindings need to be mounted by a ski shop/professional to set the proper release value (DIN). The boots are also needed for the proper mounting.

I am 56 year-old male upper intermediate to advanced skier. 5'10" 250 lbs. in good shape. Looking at these skis in 177 cm in comparison with 176 cm Rossi Experience 77 Basalt skis. Which one would likely be a better fit for my ski level?

If you are an intermediate skier the Experience is a better choice. The Pursuit is a better choice if you are an advanced or expert skier, but if you are not yet to that level, you may want to go with the Experience instead.
