Iceland is definitely up there for me as well! I believe that @Philreedshikes and @grahammer493 have both made a trip there and highly recommend it.

I've been to Edinburgh, and hiked to the top of Arthur's Seat, overlooking the city, and I have visited Craigmillar Castle, which was originally inhabited by my ancestors, just outside Edinburgh. https://www.historicenvironment.scot/visit-a-place/places/craigmillar-castle
