In this version, we lean into summer a little more with the addition of sliced peaches. It\u2019s bright, zesty, sweet and completely filling. While it is typically served as a side dish, we would be more than happy to eat it as a main course.\u00a0<\/span><\/p>\n<p><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-article_body wp-image-83993\" src=\"https:\/\/www.rei.com\/blog\/wp-content\/uploads\/sites\/4\/2019\/09\/panzanella-4.jpg?resize=1024%2C682\" alt=\"Panzanella salad in a bowl\" width=\"1024\" height=\"682\" \/><\/p>\n<p><span style=\"font-weight: 400;\">The first step is to chop up your tomatoes into bite-sized pieces, place them in a bowl and liberally salt. You want to draw out their juices, which will be used later to make the vinaigrette. While the tomatoes rest, you can move on to the bread.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">The base of Panzanella is stale bread. If you happen to have stale bread with you, perfect. If not, the next best thing is to chop it up and sautee the pieces in a skillet with some olive oil. This will toast the bread and give it a delicious crunch. Transfer the bread to a large mixing bowl, add the peaches, basil, and mozzarella balls. Finally, scoop out the tomatoes\u2014leaving as much liquid in the bottom of the bowl as possible. <\/span><\/p>\n<p><span style=\"font-weight: 400;\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-article_body wp-image-83995\" src=\"https:\/\/www.rei.com\/blog\/wp-content\/uploads\/sites\/4\/2019\/09\/panzanella.jpg?resize=1024%2C682\" alt=\"Sauteeing bread for panzanella salad\" width=\"1024\" height=\"682\" \/><\/span><span style=\"font-weight: 400;\"><br \/>\n<\/span><span style=\"font-weight: 400;\">With the tomato juice, you will want to add some white wine vinegar, olive oil, mustard, and pepper. Mix thoroughly and drizzle on top of all the other ingredients. A quick toss with a pair of tongs and the salad is ready!\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">If you are looking for something bright yet filling to enjoy on your next camping trip, this Panzanella recipe is a must!<\/span><\/p>\n<h2><b>Peach Panzanella Salad<\/b><\/h2>\n<p><em>Makes 4 servings <\/em><\/p>\n<h4><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" class=\"alignnone size-article_body wp-image-83992\" src=\"https:\/\/www.rei.com\/blog\/wp-content\/uploads\/sites\/4\/2019\/09\/panzanella-3.jpg?resize=1024%2C683\" alt=\"Stirring panzanella salad\" width=\"1024\" height=\"683\" \/><\/h4>\n<h4>Ingredients<\/h4>\n<p><em>Salad<\/em><\/p>\n<ul>\n<li><span style=\"font-weight: 400;\">1 lb tomatoes<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 teaspoon sea salt<\/span><\/li>\n<li><span style=\"font-weight: 400;\">6 oz bread, cut into 1\u201d cubes (about 2 cups)<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 tablespoon oil<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 peach, sliced thin<\/span><\/li>\n<li><span style=\"font-weight: 400;\">\u00bc cup basil leaves, chopped<\/span><\/li>\n<li><span style=\"font-weight: 400;\">8 mozzarella balls, cut in half<\/span><\/li>\n<\/ul>\n<p><i><span style=\"font-weight: 400;\">Dressing<\/span><\/i><\/p>\n<ul>\n<li><span style=\"font-weight: 400;\">1\/4 cup olive oil<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1 tablespoon white wine vinegar<\/span><\/li>\n<li><span style=\"font-weight: 400;\">1\/4 teaspoon dijon mustard<\/span><\/li>\n<li><span style=\"font-weight: 400;\">fresh cracked pepper<\/span><\/li>\n<\/ul>\n<h4>Directions<\/h4>\n<p><span style=\"font-weight: 400;\">Chop the tomatoes into bite-sized pieces and place in a bowl with 1 teaspoon sea salt. Set aside for at least 10 minutes.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Add 1 tablespoon oil to a skillet over medium heat. Once hot, add the bread cubes and toast, tossing frequently, until golden on all sides. Lift the tomatoes out of the accumulated juices and add to the salad bowl.<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Pour the reserved tomato juices into a small mason jar and add \u00bc cup olive oil, white wine vinegar, dijon mustard, and pepper.
