What do you love about this recipe?\u00a0<\/strong>I love this recipe because (1) It uses eggplant, which isn\u2019t a super popular vegetable, but when prepared this way it is sooo good!\u00a0And (2) it really classes up the campground! I like to make this for a pre-dinner app when group camping. Enjoy!<\/p>\n

Fire Roasted Eggplant<\/h4>\n

Ingredients<\/strong><\/p>\n

  • 3 whole eggplants<\/li>\n
  • Olive oil<\/li>\n
  • Sea salt<\/li>\n
  • Honey<\/li>\n
  • Balsamic<\/li>\n
  • Parmesan<\/li>\n<\/ul>\n

    Instructions<\/strong><\/p>\n

    For this recipe, you want to place the eggplants directly into the coals in the fire.\u00a0Leave them for 5-7 minutes and let the skin get black and crispy.<\/p>\n

    Remove from the fire and let cool for 20 minutes.\u00a0Once cool, remove the skin.<\/p>\n

    Slice the eggplant and drizzle with olive oil and sea salt. Top with grated parmesan and put on a grate over the fire for 3-5 minutes to let the cheese melt. Remove from heat again and drizzle with honey and balsamic vinegar.<\/p>\n
