Scism says that not much has changed since it first appeared, except that she and David manage to have more date nights these days, and now nearly 16-year-old Bella has traded her hiking booties for more naps.\u00a0<\/em><\/p>\n<p>My husband, David, and I are constantly searching for balance. We started our company, <a href=\"https:\/\/goodto-go.com\/\" target=\"_blank\" rel=\"noopener noreferrer\">Good To-Go<\/a>, 9 years ago, and it has pretty much swallowed up any free time that we once had to spend together. Sadly, the idea of a \u201cdate night\u201d has gone to the wayside.<\/p>\n<p>My idea of a great time together is sitting down to a wonderful meal at one of our favorite restaurants. I just love food, eating and the whole ritual of dining.\u00a0 My husband\u2019s idea of a great time together is hiking up multiple mountains in a day. Dining outside, of course! So I decided to make a great &#8220;date night&#8221; out of Bella\u2019s last 4,000 footer summit, <a href=\"https:\/\/www.hikingproject.com\/symbol\/7008365\" target=\"_blank\" rel=\"noopener noreferrer\">Mount Moosilauke<\/a>. As much as I think it would be funny to dine on moussaka on top of Moosilauke, I realized bringing up a pan of the delicious Greek eggplant layered dish topped with a rich b\u00e9chamel sauce would not be practical. This mission did get my creative cooking juices flowing, however.<\/p>\n<p>What could I make as the best celebratory \u201cdate night\u201d dinner for my sweet husband and me, including a few nibbles tossed to Bella as well? Light and compact was my goal (we were hiking, obviously, so everything had to be carried in our packs). Also, everything needed to be ready to go. No prepping food, cutting vegetables or slow simmering anything on the summit. I wanted to whip this meal together, at the top, in just a few minutes. Good To-Go friends and family joined her for the hike up #mtmoosilauke. Dense fog and high winds greeted us at the summit, but that wouldn&#8217;t stop the celebration. Being that it was fall in New England, I focused on hearty comfort food, and let me tell you, it was perfect. This was\u00a0our menu.<\/p>\n<h2>Trailside Date Night<\/h2>\n<p style=\"text-align: center;\"><strong>Hor d&#8217;ouevres<br \/>\n<\/strong><em>Wine, Cheese and Olives<\/em><\/p>\n<p style=\"text-align: center;\"><strong>Main Course<br \/>\n<\/strong><em>Herbed Potato Gnocchi with Brussels Sprouts and Bacon<\/em><\/p>\n<p style=\"text-align: center;\"><strong>Dessert<br \/>\n<\/strong><em>Banana and Chocolate-Hazelnut Spread French Toast Sandwiches<\/em><\/p>\n<p>This may all sound super difficult, but once I explain how to prepare it, you&#8217;ll also be able to make this on the trail with very little effort.<\/p>\n<h4><strong>Equipment List:<\/strong><\/h4>\n<ul>\n<li>1 stove\u2014I always hike with my <a href=\"\/product\/127968\/jetboil-flash-cooking-system\">Jetboil<\/a><\/li>\n<li>1 saut\u00e9 pan\u2014Jetboil makes an awesome 8\u201d <a href=\"\/product\/149911\/jetboil-summit-skillet\">saut\u00e9 pan<\/a><\/li>\n<li>2 wine glasses\u2014YETI makes <a href=\"\/product\/192152\/yeti-rambler-wine-tumbler-with-magslider-lid-10-fl-oz\">wine tumblers<\/a>, perfect for the outdoors<\/li>\n<li>2 <a href=\"\/search?q=bowls\">bowls<\/a><\/li>\n<li>2 <a href=\"\/search?q=spork\">sporks<\/a><\/li>\n<li><a href=\"\/learn\/expert-advice\/knives-and-tools--how-to-choose.html\">Pocket knife<\/a> (or whichever knife you prefer)<\/li>\n<li><a href=\"\/product\/756489\/jetboil-jetset-utensil-kit\">Slotted spatula<\/a>, or other slotted utensil<\/li>\n<li>Any other romantic decor you wish to carry!<\/li>\n<\/ul>\n<h3><strong>Wine, Cheese and Olives<\/strong><\/h3>\n<div id=\"attachment_15127\" style=\"width: 1034px\" class=\"wp-caption alignnone\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-15127\" class=\"wp-image-15127 size-article_body\" src=\"https:\/\/www.rei.com\/blog\/wp-content\/uploads\/sites\/4\/2017\/06\/olives_1.jpg?resize=1024%2C683\" alt=\"\" width=\"1024\" height=\"683\" \/><p id=\"caption-attachment-15127\" class=\"wp-caption-text\">Photo credit: Jennifer Scism<\/p><\/div>\n<p>This one is pretty self-explanatory.<\/p>\n<ul>\n<li>Pour your favorite bottle of wine into a <a href=\"\/product\/152028\/platypus-platypreserve-portable-wine-bottle-27-fl-oz\">Platypus<\/a> or other travel-safe bottle.<\/li>\n<li>Bring three hard cheeses (hard because you can pack them tightly, and hard cheese is <a href=\"https:\/\/ask.usda.gov\/s\/article\/Does-all-cheese-need-to-be-refrigerated#:~:text=As%20a%20general%20rule%2C%20hard,last%20longer%20if%20kept%20refrigerated.\">safe to eat without being refrigerated<\/a> for several hours). I suggest a Spanish Manchego, an aged Dutch Gouda and a wedge of Grana Padano (<em>reserve a piece for the potato gnocchi course<\/em>).<\/li>\n<li>To accompany the cheese, bring a delicious mixture of olives. Most local groceries sell olives seasoned with herbs and marinated in olive oil. I suggest double-bagging the olives to avoid the oil leaking in your pack.<\/li>\n<\/ul>\n<h3><strong>Herbed Potato Gnocchi with Brussels Sprouts and Bacon<\/strong><\/h3>\n<div id=\"attachment_15128\" style=\"width: 1034px\" class=\"wp-caption alignnone\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-15128\" class=\"wp-image-15128 size-article_body\" src=\"https:\/\/www.rei.com\/blog\/wp-content\/uploads\/sites\/4\/2017\/06\/gnocchi_1.jpg?resize=1024%2C711\" alt=\"\" width=\"1024\" height=\"711\" \/><p id=\"caption-attachment-15128\" class=\"wp-caption-text\">Photo: Jennifer Scism<\/p><\/div>\n<p>This dish takes little more prep work at home but is very simple to cook at the top.<\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<ul>\n<li>1 small onion\u2014cut into \u00bc\u201d dice<\/li>\n<li>2 garlic cloves\u2014minced<\/li>\n<li>2 tablespoons olive oil<\/li>\n<li>1 \u00bd cup brussels sprouts, thinly sliced<\/li>\n<li>5 sprigs fresh thyme<\/li>\n<li>3 sprigs fresh oregano<\/li>\n<li>4 tablespoons Grana Padano\u2014grated (or other Parmesan-style cheese)<\/li>\n<li>3 tablespoons unsalted butter<\/li>\n<li>1 lb. vacuum-packed shelf-stable potato gnocchi<\/li>\n<li>2.5 oz. fully cooked shelf-stable bacon<\/li>\n<li>Salt and pepper to taste<\/li>\n<\/ul>\n<p><strong>Preparation at Home:<\/strong><\/p>\n<ul>\n<li>Cook the diced onions with the olive oil in a small saut\u00e9 pan set on low heat until the onions caramelize.<\/li>\n<li>\n<div id=\"attachment_15129\" style=\"width: 1034px\" class=\"wp-caption alignnone\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-15129\" class=\"wp-image-15129 size-article_body\" src=\"https:\/\/www.rei.com\/blog\/wp-content\/uploads\/sites\/4\/2017\/06\/garlicOnion_1.jpg?resize=1024%2C670\" alt=\"\" width=\"1024\" height=\"670\" \/><p id=\"caption-attachment-15129\" class=\"wp-caption-text\">Photo: Jennifer Scism<\/p><\/div>\n<p>Add the garlic and cook for a couple more minutes. Season with salt and pepper. Let them cool and pack into a small sealable food bag. Pack into a sealable food bag and refrigerate.<\/li>\n<li>Finely chop the thyme and oregano and pack into a a sealable food bag.<\/li>\n<li>Pack the grated cheese and butter into separate sealable food bags.<\/li>\n<li>The gnocchi and bacon are sold in bags and are already set to go.<\/li>\n<li>I usually mix some sea salt and fresh cracked pepper together and bring that in a tiny separate bag.<\/li>\n<\/ul>\n<p><strong>On the Trail or Mountain Top:<\/strong><\/p>\n<ul>\n<li>Fill the saut\u00e9 pan \u00be full with water and place on high heat.<\/li>\n<li>Once boiling, add the gnocchi and cook on a moderate boil for 4 to 5 minutes or until they are all floating at the top.<\/li>\n<li>I suggest bringing a slotted spatula that is held on the edge of the pan to strain the water off.<\/li>\n<li>\n<div id=\"attachment_15131\" style=\"width: 1034px\" class=\"wp-caption alignnone\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-15131\" class=\"wp-image-15131 size-article_body\" src=\"https:\/\/www.rei.com\/blog\/wp-content\/uploads\/sites\/4\/2017\/06\/gnocchi_2.jpg?resize=1024%2C683\" alt=\"\" width=\"1024\" height=\"683\" \/><p id=\"caption-attachment-15131\" class=\"wp-caption-text\">Photo: Jennifer Scism<\/p><\/div>\n<p>This is a one-pan dish, so leave the gnocchi in the pan and add the butter, cooking over medium-high heat until the gnocchi is lightly browned and crispy.<\/li>\n<li>Add the onions and garlic.<\/li>\n<li>Tear the bacon into small pieces and add them to the pan, cooking for a minute or two.<\/li>\n<li>\n<div id=\"attachment_15132\" style=\"width: 1034px\" class=\"wp-caption alignnone\"><img data-recalc-dims=\"1\" loading=\"lazy\" decoding=\"async\" aria-describedby=\"caption-attachment-15132\" class=\"wp-image-15132 size-article_body\" src=\"https:\/\/www.rei.com\/blog\/wp-content\/uploads\/sites\/4\/2017\/06\/gnocchiHerbs_1.jpg?resize=1024%2C683\" alt=\"\" width=\"1024\" height=\"683\" \/><p id=\"caption-attachment-15132\" class=\"wp-caption-text\">Photo: Jennifer Scism<\/p><\/div>\n<p>Add the brussels sprouts and a couple tablespoons of water, and cook until wilted.<\/li>\n<li>Season the whole dish with salt and pepper to taste.
